You’ll need:

  • Cooked rice
  • Kimchi (plus a spoonful of kimchi juice)
  • Soy sauce, sesame oil
  • Scallions and an egg (optional)

 

How to make it:

Sauté the chopped kimchi in a little oil for 30 seconds until fragrant. Stir in the rice and a splash of soy sauce and mix well. Drizzle sesame oil over the rice and top with a fried egg. 

 

Tip: Day-old rice is best for fried rice! We topped our bowls similarly, with a fried egg for good measure.

 

2. Kimchi Pancakes (Kimchi Jeon) 

Crispy exterior and soft, savory interior. The ideal snack to keep on hand or share with friends.

 

You’ll need:

  • Chopped kimchi
  • All-purpose flour
  • Water
  • Optional: sliced scallions or onions

 

How to make it:

Combine kimchi, flour, and water in a bowl. The goal is to have a relatively thick pancake batter. Pour the batter into a hot, oiled frying pan and cook until both sides are golden brown.

 

Tip: Dip into a soy sauce mixed with vinegar and sprinkled with sesame seeds for a delicious street-food-style bite.

 

3. Kimchi Grilled Cheese Sandwich

Melty cheese + spicy/tangy kimchi crunch = a fusion flavor explosion-toasted sandwich style. 

 

You will need:

  • Bread of your choosing
  • Kimchi (well-drained)
  • Sharp cheddar or mozzarella
  • Butter or mayo for toasting

 

How to make it: 

Layer cheese and kimchi between slices of bread. Grill in a buttered pan until golden and melted.

4. Kimchi Udon or Ramen Stir Fry

You will need: 

  • Udon (or instant ramen, cooked and drained)
  • Kimchi
  • Soy sauce, sesame oil, and garlic
  • Optional: any protein you want, like tofu or eggs

 

How to make it: 

Sauté kimchi and garlic, add noodles, and season with soy sauce and sesame oil; mix to coat. 

 

Tip: The concept will work with any type of noodle you have. We serve a dish at the restaurant that is quite similar to bulgogi and scallions!

 

5. Kimchi Tofu Stir-Fry

Vegan, protein-rich, and full-flavored.

 

You’ll need:

  • Firm tofu (cubed)
  • Kimchi
  • Soy sauce, garlic, sesame oil
  • Green onion or sesame seeds

 

How to make: Pan-fry tofu until golden. Add kimchi and other seasonings, and stir to coat. Cook until everything’s warm and yummy.
